In the vineyard, Apolline’s work begins with the meticulous selection of parcels. She works with partner winegrowers to monitor grape ripening and determine the optimal time for the harvest. This step is crucial to ensuring the quality of the future wines.

After the harvest, Apolline oversees the winemaking process, ensuring that each grape variety reaches its full potential. She also participates in the final blending, a delicate process, which involves combining different cuvées to create a harmonious wine that stays true to Baron de Lestac’s signature style.
